Bring the water to a boil in a medium saucepan
Add the rice, curry powder, and salt
Reduce heat, cover, and cook slowly for 15 minutes or until all the liquid has been absorbed and the rice is tender
Add the remaining ingredients
Stir gently with a fork and serve hot
