3/4 cup of whole wheat rice or 2 cups of cooked white rice with 3 tablespoons
1/2 cup of fresh Minas cheese, grated
2 egg yolks, beaten
2 tablespoons of chopped parsley
Salt and pepper to taste
1 handful of fresh spinach leaves, chopped
2 tablespoons of triticale germ
1 tablespoon of butter

Cook the rice and mix with the cheese
Mix the eggs, parsley, salt, and pepper
Combine the cooked rice, cheese, and raw spinach
Pour into a 20x20 cm square refractory dish greased with oil
Mix the triticale germ with butter and distribute over the rice mixture
Bake in a moderate oven (350°F) for about 35 minutes
Dish serves 8.
