4 cups of boiling water

Cook the bacon in a medium pan until golden brown
Remove from heat and let cool slightly
Strain excess fat and reserve
Add the okra and cook over low heat for about 5 minutes
Add the rice and boiling water, then stir
Season with salt and black pepper to taste
Simmer covered over low heat until the rice has absorbed all the liquid (about 15 minutes)
Serve in a dish and garnish with crispy bacon
Serve 6 portions.
