4 cups of rice

600 g of broccoli florets
200 g of smoked bacon, finely chopped
5 laurel leaves
4 cloves of garlic
4 liters of chicken broth
2 large onions, cut into pieces

The night before, place the duck, salt, garlic, onion, bay leaves, white wine, and colorant in a large container
Mix well, cover with plastic wrap, and refrigerate
Remove the duck pieces from the marinade and blend them in a blender together with the smoked bacon until you get a thick sauce. Reserve
In a large skillet, place the duck breast with the fat side down along with the other pieces
Fry over low heat for 20 minutes or until golden brown
Flip and fry the side without the layer of fat
Remove the duck and discard all the fat
Put the blended sauce and duck in a large skillet
Add toasted cashews and dried currants, cover the skillet, and cook over medium heat for 1 hour or until the meat is tender
Gradually add the water
In another pot, boil the chicken broth and combine with the rice
Cook until the rice is tender
Remove from heat and drain without discarding the broth
Return the broth to the skillet and cook the broccoli for 10 minutes or until tender
Drain
When the duck is ready, remove it from the heat, add lime rind and peppers, and mix
Bone and cut the meat into pieces
Combine with the rice
In a serving dish, place the rice with the duck and, on top, the broccoli.
