1/3 cup of olive oil
6 cloves of garlic, minced
1 large onion, chopped
1/2 cup of white wine vinegar
1 tablespoon of thyme
1.5 kg of pork (inferior loin), cut into pieces
2 cups of rice
3 cups of water
2 tomatoes, peeled and chopped
Salt and black pepper to taste

In a pressure cooker with the olive oil, add the garlic, onion, vinegar, thyme, and pork
Refine for 15 minutes, then seal the cooker and cook for an additional 35 minutes from the time it starts boiling
Remove from heat, let all the pressure release
Open the lid, combine the rice, water, and tomatoes
Season, reseal the cooker, and cook for another 10 minutes after it boils again
Serve immediately.
