For the sweet rice
Peel of 1 lime, cut into strips (only use the green part)
1 pinch of salt
1 1/4 cup of rice
3 1/2 tablespoons of butter
4 cups of milk
6 eggs, lightly beaten
1 1/2 cup of sugar
1 tablespoon of cinnamon powder (optional)
For the meringue
6 egg whites
3/4 cup of sugar
For the sweet rice

Preheat the oven to hot (400°F)
Prepare the sweet rice: in a medium saucepan, bring 3 cups of water with the lime peel and salt to a boil
When it starts to boil, add the rice
Cook until it becomes soft
Add the butter and milk
Remove from heat and, stirring constantly, gradually add the eggs
Return to heat and stir until it starts to boil again
Add the sugar and cook for an additional 4 minutes, until the sugar is fully dissolved
Remove the lime peel and place the rice in a refrigerator
Dust with cinnamon
Prepare the meringue: beat the egg whites until frothy and gradually add the sugar, stirring until stiff peaks form
Cover the sweet rice with the meringue and bake in the oven for 10 minutes, or until it starts to brown.
