Peel of 1 lime, cut into strips (only the green part of the peel)
1 pinch of salt
1 1/4 cup of rice
3 1/2 tablespoons of butter
4 cups of milk
6 lightly beaten eggs
1 1/2 cup of sugar
1 teaspoon of cinnamon (optional)
For the meringue
6 egg whites
3/4 cup of sugar

Bring 3 cups of water to a boil with the lime peel and salt
When it starts to simmer, add the rice
Cook until the rice is tender
Add the butter and milk
Remove from heat and, stirring slowly, add the eggs
Return to heat and cook, stirring constantly, until it comes to a boil again
Add the sugar and cook for an additional 4 minutes, until the sugar is fully dissolved
Remove the lime peel and place in a refrigerator
Dust with cinnamon
Prepare the meringue: beat the egg whites until fluffy and add the sugar, slowly, until stiff peaks form
Cover the sweet rice and bake in a preheated oven at 200°C for 10 minutes, or until it starts to brown
Serve hot.
