2 tablespoons of finely chopped onion
1 tablespoon of olive oil
1 can of corned maize, drained
1 cup of sliced green beans
2 cups of broccoli florets
1 medium-sized carrot, peeled and sliced
100g of mushrooms
1 pound boneless and skinless chicken breast, cut into cubes
Salt to taste
1 tablespoon of butter
4 cups of cooked whole grain rice
2 tablespoons of finely chopped onion

1 Heat the oil in a large skillet over medium heat
Add the onion and cook for 1 minute
Add the vegetables and cook for 5 minutes or until they're tender
2 Season the chicken with salt
In a medium-sized skillet, melt the butter over medium heat
Add the chicken and cook until it's browned and cooked through
3 Combine the chicken and vegetables with the rice
Mix well
Check the seasoning and if desired, sprinkle with chopped parsley before serving.
