1/3 cup (stick) of olive oil

1 In a large saucepan, over high heat, bring the water and salt to a boil
Add the rice, stir well, and cook until it's tender
Drain and reserve
2 In a large frying pan, over medium heat, sauté the onion in butter with olive oil, stirring occasionally, until the onion is tender
3 Add the rice and, using a spatula, press it well to the bottom of the frying pan
Increase the heat and fry until the bottom is golden brown
Flip the frying pan over a large plate
Transfer back to the frying pan to toast the other side
4 Remove from the heat, cut into irregular pieces, and serve on a platter afterwards.
