4 tablespoons of olive oil
2 cloves of garlic minced
1 onion-cut into slices
2 cups (scraped) of cooked rice
4 cups (scraped) of boiling water
2 tablespoons of salt
1 carrot cut into cubes
1 tablespoon of butter
2 eggs
1 tablespoon of salt
100g of ham cut into cubes
2 tablespoons of chopped scallion

Heat the olive oil, sauté the garlic, onion and rice
Add boiling water, salt and carrot and cook on low heat
In a non-stick skillet melt the butter
Beat the eggs with salt and add to the skillet, stirring until they're in small pieces
Remove from heat, add ham, scallion and mix into the rice
Serve immediately.
