To desalinate, soak the cod fish in brine for 24 hours, changing the water three times a day until the salt is gone
Remove the bones and skin from the fillets
Dip the fillets in beaten eggs and then coat with breadcrumbs, covering them completely
Arrange the fillets in a baking dish with the onions, potatoes, and garlic
Drizzle with plenty of olive oil and bake
Add the broccoli just a little before removing the cod fish from the oven
Serve with white rice.
