400g of cod
4 tablespoons of lemon juice or olive oil
1 onion, finely sliced (90g)
1 lemon, peeled and thinly sliced (80g)
black pepper to taste
1/4 cup of chopped fresh parsley
1 clove of garlic, minced
4 tablespoons of breadcrumbs

Soak the cod in cold water, enough to cover it, for 24 hours, changing the water several times
Cut the cod into uniform pieces
Cook for about 25 minutes or until it's cooked through
Drain and rinse under cold running water
Remove any bones
Spread 1 tablespoon of olive oil in the bottom of a shallow baking dish
Place the cod in the dish and top with the onion, lemon, parsley, garlic, and breadcrumbs
Dust with black pepper
Brush with remaining olive oil
Cover with aluminum foil and bake in a preheated moderate oven (180°C) for 40 minutes
Remove the foil and bake for an additional 10 minutes
Serves 4.
