1 kg of cod
1/4 cup of mustard
1/2 cup of breadcrumbs from fresh parsley
1/4 cup of chopped green onion
1/4 cup of chopped fresh thyme
1 tablespoon of dried oregano
1 1/2 tablespoons of butter
1/3 cup of grated cheddar, Gouda, or Edam cheese
1 kg of cod
1/4 cup of mustard

Leave the cod to soak in cold water for 24 hours, changing the water a few times
Drain the cod and place it in a saucepan
Cover with cold water
Bring to a boil, then cook for about 5 minutes
Drain, remove the skin and bones, and cut into irregular pieces
Place the cod in a refrigerator-proof dish greased and brush with mustard
Sprinkle with the parsley-mustard-scallion-oregano mixture
Top with butter cubes and sprinkle with grated cheese
Place in a hot oven until well heated and the cheese is melted
Serve 6 portions.
