Wash the cod fish thoroughly under cold running water
Cut it into 6 or 7 pieces with your hands
Hold each piece under a faucet and rub it gently with your fingers to help remove excess salt
Cover with cold water
Let it rest for 1 hour
Drain, cover with fresh water, and let it rest for another hour
Drain, rinse under cold running water, and drain again
Squeeze the cod fish well to remove as much moisture as possible
Break apart well, removing any remaining bones
Mix with the tomato, green onion, olive oil, white pepper, and salt to taste
Let it rest for 10 minutes before serving
Serve in two portions.
