In a medium-sized saucepan, mix all the ingredients well
Bring to a simmer, without stirring, until it thickens and forms a ball, then reduce heat
Check by dropping a small amount of the mixture into cold water
If it forms a soft ball that holds its shape, it's done
Remove from heat and spread immediately onto a smooth surface, preferably marble, greased with butter
Let cool slightly and work the dough with your hands, stretching and gently twisting until it becomes white, dull, and firm
Divide into three parts and stretch quickly to achieve a thickness of 2 cm
Cut into 1.5 cm pieces with scissors
Spread in baking dishes and let dry for 3 hours
Wrap in special wrapping paper or store in an airtight container.
