Combine the heavy cream, granulated sugar, and unsalted butter in a saucepan and heat over low until smooth
Cook, stirring constantly, until thickened and slightly caramelized
Add the shredded coconut, chopped nuts, vanilla extract, and enough red coloring to achieve a light pink color
Continue cooking, stirring frequently, until the mixture forms a solid mass and can be removed from the saucepan
Pour into a 9x13 inch buttered dish, let cool, and cut into small squares approximately 3 cm in size
Yield: about 25 barfis
