10 to 12 thick slices of Gouda, Cheddar or Italian cheese, and a pinch of black pepper

Wash the potatoes well and scrub them clean to remove any impurities
Boil the potatoes in salted water for about 20 to 22 minutes, or until they are cooked but still firm
Drain the potatoes and let them cool slightly
Grease a baking dish with the olive oil
Cut the potatoes in half lengthwise and arrange them in the baking dish with the cut side up
Place 1/2 slice of cheese on top of each potato
Sprinkle with a pinch of black pepper
Place the dish in a hot oven preheated to 225°F (110°C)
Bake for about 10 minutes, or until the cheese is melted and serve warm
