Heat a medium-sized skillet with the butter and water over medium heat
When it comes to a boil, add the flour all at once, stirring constantly with a wooden spoon
Cook without stopping until the mixture forms a ball that detaches from the bottom of the pan
Turn off the heat and let it rest for 3 minutes
Add the eggs one by one, stirring vigorously
Add the mashed sweet potato and season with salt and pepper
In a frying pan, heat enough oil to fry the mixture
Fry small portions of the prepared mixture until golden brown
Drain on paper towel and serve still warm.
