Preheat the oven to 200°C
Aquench the potatoes in boiling water until they're tender
Cut the potatoes in half lengthwise
In a baking dish, arrange the potatoes and top with garlic, onion, and tomatoes

Drizzle with olive oil and sprinkle thyme
Gently mix everything together and bake for approximately 25 minutes or until the potatoes are golden brown
Serve immediately.
