Heat 2 tablespoons of butter or oil in a small skillet until very hot
Add one steak at a time and cook for 2-3 minutes per side, or until it reaches your desired level of doneness
Season with salt and pepper to taste
If using lean beef, add a bit more fat to the pan as needed
Arrange the steaks on a platter
Add a bit more fat to the skillet, then caramelize the onion slices slowly until they're golden brown
If desired, add a splash of water to achieve a richer sauce
Sprinkle with salt and place over the steaks
Serve 2-3 times.
