4 slices of mole beef or flank steak

1 egg yolk
2 tablespoons of mustard
2 tablespoons of vinegar
1/4 cup of olive oil
salt and pepper to taste
milk if needed

Season the beef and fry both sides
Keep warm while preparing the sauce
Beat the eggs with the egg yolk
Add the mustard and continue beating
Gradually add the olive oil and vinegar, beating without pause
Cook in a bain-marie until thickened
If too thick, you can add a little milk
Serve 2 to 4 portions.
