Season the beef with salt and black pepper
In a frying pan, fry the smoked bacon until golden brown
Remove with a slotted spoon
In the remaining fat in the pan, cook the onion until golden brown
Remove from heat
Crush the bacon
In a bowl, mix together the breadcrumbs, milk, egg, bacon, onion, and parsley
Stuff each beef fillet with this mixture, roll up, and secure with toothpicks
In a saucepan, melt the butter with olive oil over high heat
Fry the beef fillets until they are golden brown on all sides
Add the wine, cover the saucepan, and simmer over low heat, gradually adding hot water as needed, until the meat is tender
Serve immediately.
