1 1/2 pounds sweet potatoes

Peel and grate the sweet potatoes, then squeeze out as much liquid as possible
Dust a surface with flour and place the grated sweet potato mixture on it
Add the egg, salt, and cold butter or margarine, cut into small pieces
Mix quickly until just combined, then refrigerate for 20 minutes
Divide the dough into three portions and shape each portion into one of three different types of biscuits
