Cream the butter or margarine with sugar
Beat well and add egg and vanilla extract
Melt the chocolate in a double boiler
Remove from heat, let cool for 2 minutes, then whisk into the butter mixture
Combine flour and baking powder until smooth
Place this mixture in a bowl and refrigerate
When firm, roll out the dough to 1/2 cm thickness
Cut round cookies using a cookie cutter or glass, and place on an ungreased baking sheet, leaving a 2cm space between each cookie
Bake at 175°C (moderate) for 10-12 minutes
Remove from baking sheet and let cool
Assemble sandwiches by uniting two cookies with sorbet or preferred filling
Wrap individually in aluminum foil and refrigerate until serving time
Makes about 1 1/2 dozen cookies, or 9 sandwiched cookies
These cookies can also be filled with whipped cream
In this case, they do not need to be refrigerated.
