Beat the butter with the sugar until creamy
Add the eggs one at a time, beating well after each addition
Add the vanilla extract
Sift together the flour, baking powder, and salt, then add to the mixture
Add the shredded coconut
Chill in the refrigerator until firm enough to roll out
Roll out the dough on a floured surface
Cut into desired shapes using a cookie cutter or glass
Bake in an ungreased cookie sheet at 350°F for 12 minutes, or until golden brown
Allow to cool and decorate with a mixture of water and powdered sugar, if desired
Yield: approximately 4 days' worth of cookies, each about 3 cm in diameter.
