2 cups of all-purpose flour
2 cups of grated cheddar cheese
1 cup of whole wheat flour
1/4 cup of chopped fresh parsley
3 tablespoons of chopped fresh cilantro
2 tablespoons of finely chopped green onion
2 teaspoons of salt
6 pitted and sliced green olives
2 large eggs
750g of cooked cassava
500g of clean and fried fish (roebuck or cod)

Cut the fish into small pieces and set aside
Pulse the cassava, all-purpose flour, and whole wheat flour in a food processor until coarse
Add the parsley, cilantro, green onion, salt, olives, and fish to the processor
Mix well

Scoop out about 1/4 cup of the mixture and shape into balls with your hands
Beat the eggs lightly in a separate bowl
Dip each ball into the beaten eggs and then coat with all-purpose flour, shaking off any excess
Fry the balls in hot oil until golden brown
Drain on paper towels and serve.
