1/2 cup of cod
4 tablespoons of olive oil
3 cloves of garlic, minced
1 tablespoon of chopped onion
1/2 cup of butter
1 cup of water
1/4 teaspoon of ground nutmeg or mace
1 cup of all-purpose flour
1/2 teaspoon of black pepper
4 eggs
1/2 cup of cod
4 tablespoons of olive oil

Soak the cod in water for one day and night
Drain the cod and fry it in olive oil with garlic and onion
Break up the cod and remove any bones
Mix well with a wooden spoon, mashing it all together
Check the seasoning and adjust to taste
Set aside
In a pan, combine water and butter
Bring to a boil
Mix flour with nutmeg and black pepper
Add to the pan and stir until the mixture comes away from the sides of the pan
Remove from heat
Beat in eggs one at a time, beating well with a wooden spoon
Add the cod and mix very well
Use 1/2 cupfuls of the mixture for frying, using enough hot oil to cook through
Serves 6 portions.
