2 cups cooked and peeled sweet potatoes
1 cup all-purpose flour
1/2 cup light margarine
1 medium onion, skin removed and grated
1 teaspoon ground ginger

Mix all the ingredients well and shape into 8 fritters
Place in a greased mold and press down slightly
Bake for 30 minutes in a preheated oven
Serve warm.
