Combine the vanilla wafers, confectioner's sugar, almonds, 2 tablespoons of unsweetened cocoa powder, orange juice, red food coloring, and rum extract
Mix well to obtain a firm dough
Shape into small balls with the dough
Place 4 tablespoons of unsweetened cocoa powder and granulated chocolate in a small bowl
Beat the egg white in a separate small bowl
Coat half of the balls in the chocolate mixture and the remaining half in the beaten egg white, then roll in the granulated chocolate
Let dry for 4 days.
