1 In a large bowl, sift the corn with the flour and add the scalded milk
Mix well with a wooden spoon and let it cool
2 Add the yolks, butter, and a pinch of salt, beating well after each addition
Beat the whites until stiff and fold them into the mixture, stirring gently
3 Heat oil in a small, deep frying pan and fry the mixture by the spoonful
Fry a few fritters at a time
4 Remove them with a skimmer and let them drain on paper towels
Let them cool and dust with sugar and cinnamon
Serve immediately.
