5 medium yuca roots cooked and processed in a blender
2 eggs
2 tablespoons of grated Parmesan cheese
1 tablespoon of salt and garlic powder
1 medium onion, finely chopped
1 tablespoon of butter
Chives or parsley to taste
Pepper to taste
All-purpose flour, enough for dusting the fritters (and if needed, to adjust the dough consistency)
300g of Minas cheese in cubes
One can of oil for frying

All-purpose flour, enough for dusting the fritters (and if needed, to adjust the dough consistency)
300g of Minas cheese in cubes
One can of oil for frying
Cook the yuca and process it while still warm
Add the onion and other seasonings, kneading the dough until just combined, leaving out the eggs and Parmesan until last
Shape into small balls, placing a cube of Minas cheese in each one
Dust with flour and fry in hot oil
(Tip: if the dough is too sticky, add a little more flour
This dough is also suitable for making meat-filled fritters.)
