1.5 lbs cod fillets
1 onion, cut into small pieces
3/4 cup breadcrumbs
2 tablespoons butter or margarine at room temperature
3 eggs
1/3 cup milk
salt and white pepper to taste
3-4 tablespoons butter or margarine for frying
For the sauce:
2 tablespoons olive oil
1 medium onion, cut into rings
1 small aipim root, peeled and sliced
1 small carrot, peeled and sliced
1 clove garlic, minced
3 large tomatoes, peeled and diced
salt and white pepper to taste
1/4 teaspoon paprika
1/2 teaspoon parsley

For the sauce:

1 small carrot, peeled and sliced

Make ahead: grind the fish and onion together in a meat grinder or finely chop the fish and grate the onion
Mix the breadcrumbs with small pieces of butter or margarine and work the mixture into the fish as if it were a dough
Add all remaining ingredients and mix well
Grease your hands with oil and shape 12 fishballs
Place them on a plate or tray and cover with plastic wrap
(Leave in the refrigerator overnight for the fishballs to become more firm.) Make the sauce also ahead of time: heat the olive oil in a pan, add the onion, aipim root, carrot, garlic, and cook for 3-4 minutes
Add the tomatoes and remaining ingredients and simmer over low heat for 45 minutes, stirring occasionally
If necessary, add 1/2 cup hot water
Allow to cool slightly, then puree in a blender
If too thick, add 1/3 cup hot water
Place in a bowl, cover, and refrigerate
Beforeserving, melt the butter or margarine over medium heat and fry the fishballs for about 5 minutes on each side or until they are golden brown on both sides
Heat the sauce well over low heat, stirring occasionally, place in a serving dish, and serve with the fishballs
Serve 4 portions.
