Mix the prosciutto with the white sauce, onion, ketchup, and let it sit in the refrigerator to firm up
Shape small balls from this mixture
Beat the egg with water, coat the balls in cake flour, then in the beaten egg, and finally in the cake flour again
Fry in very hot oil and place on paper towels to drain
