Beat the butter well with the sugar
Add the egg yolks one by one, always beating until a creamy white mixture forms
Gradually add the potato starch mixed with the yeast powder and salt
Mix well
Beat the egg whites until stiff and fold into the mixture
Mix carefully
Place in a 30 cm diameter baking pan greased with butter
Bake in a moderate oven (180°C), preheated, for 40 minutes or until, when inserting a toothpick into the center, it comes out clean
Let cool slightly and unmold.
