3/4 cup of butter
1/4 cup of confectioners' sugar sifted and well packed into a 1/2 cup measure
6 slices of fresh pineapple, each about 1 cm thick
Some cherries (for decorating)
2 cups of all-purpose flour
1 cup of granulated sugar
2 teaspoons of baking powder
A pinch of salt
2 large eggs
1 teaspoon of vanilla extract
1 1/3 cups of whole milk

Place 4 tablespoons of butter in a 25 cm diameter non-stick skillet or cake pan
Microwave on high for 1 minute to melt the butter
Sprinkle the confectioners' sugar evenly over the melted butter
Arrange the pineapple slices on top, with a cherry in the center of each slice
Microwave on high for an additional 3 minutes
Let cool and reserve
Mix together the flour, granulated sugar, baking powder, and salt
Add the remaining butter, eggs, vanilla extract, and milk to the dry ingredients
Mix well until a smooth batter forms
Spread the batter evenly over the pineapple slices
Microwave on medium-high for 5 minutes
Increase heat to high and bake for an additional 2-6 minutes, or until the cake is cooked through and springs back when touched
Let cool for 5 minutes before serving
