3 tablespoons of olive oil
1 chopped onion
1 1/2 cups of finely chopped salted pecans or cashews
2 cups of cooked rice
1/2 pound ricotta cheese
2 tablespoons of chopped fresh parsley
1/4 cup of chopped scallions
Salt and pepper to taste
3 lightly beaten eggs
3 tablespoons of olive oil

Heat the olive oil in a pan and fry the onion until it's soft
Add the salted pecans or cashews and cook for another 5 minutes
Mix the cooked rice, ricotta cheese, chopped scallions, parsley, salt, pepper, and eggs
Add the fried onion
Grease a cake mold with olive oil
Place the rice mixture in the mold and bake in a moderate oven for 1 hour
Demold and serve in 8 to 10 portions.
