Cook 3 large potatoes. Finely chop 200g of tuna, along with a tablespoon of capers and two or three anchovies that have been thoroughly cleaned. Sift everything through a sieve. Add, stirring constantly with a wooden spoon, a bit of warm milk and a small piece of butter or margarine. Then blend well, combining the tuna and capers. Shape the mixture into a ball and place it on a plate. Refrigerate. Make a mayonnaise and cover the tuna ball with it just before serving, garnishing it with anchovies.
