Grease a 25 cm diameter cake pan with a hole in the middle
Beat the butter with sugar until creamy
Add eggs and beat well
Mix in the cold sweet potato, flour, yeast, and vanilla extract
Beat very well
Pour into the prepared pan and bake in a hot oven (200°C) for about 40 minutes or until a toothpick comes out clean
Cut into 12 slices
Note: If desired, dust with confectioner's sugar.
