Combine the yeast with warm water and let it rest for a bit
Mix until dissolved, then reserve
Mix together the grated carrots, salt, egg, and mashed sweet potatoes
Add 1/3 cup of melted butter, the yeast mixture, and flour
Knead until smooth and soft
If necessary, add a little more flour
Place in a greased bowl and brush with a little oil on top
Cover with a towel and let it rise for 1 to 1.5 hours
Shape into a loaf pan or round cake pan
The dough should be about 1.5 cm thick
Baste with melted butter, letting it rise for approximately 30 minutes
Poke holes with your finger, spaced 4 cm apart
Mix together the remaining grated carrots and melted butter, then sprinkle over the top
Bake in a preheated oven at 200°C for 20 minutes or until golden brown
Serve warm, cut into squares
