Shape into a loaf shape and place in a 9x5-inch loaf pan
Bake at moderate heat for about 1 hour
Let it rest for 10 minutes
Drain excess liquid and unmold onto a refractory surface
Prepare the mashed potato topping as follows: boil the potatoes, peeled, in salted water until they're tender
Drain and mash well
Add butter, milk, and egg yolk, seasoning to taste, and mix until light and fluffy
Spread over the meatloaf, leaving a thick layer
Garnish with fork marks
Mix grated cheese with melted butter or margarine and sprinkle on top
Bake at high heat to brown
