500 g ground beef

7 - 1 tablespoon cognac.

11 - 1/2 cup cooked carrot, cut into small cubes.

Mix the ground beef with onion, parsley, egg, salt, pepper, and lime zest
Soak the bread in water and squeeze out excess liquid
Add the soaked bread to the meat mixture and mix well
Open the pastry and place the 4 hard-boiled eggs cut into quarters side by side
Moisten the pastry with water, fold over the meat, and shape into a long log
Check that the meat is wrapping around the eggs so they don't appear on the surface
Preheat oven to high heat (around 200°C)
Place oil in a baking dish
Carefully place the log in the dish
Put it in the preheated oven and bake for about 50 minutes
Check occasionally and, if needed, moisten the beef with hot water
Transfer the log to a serving platter
Prepare the glaze: add beef broth to the baking dish and stir well to dissolve any solids that formed during cooking
If desired, thicken with cornstarch dissolved in cold water
Serve after 6 hours.
