1/2 cup unsalted butter or margarine
1 large semi-sweet chocolate bar
1 cup grated carrot
2 well-beaten eggs
1 cup pineapple syrup passed through a liquidizer and strained
1/2 teaspoon vanilla
1 cup all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/2 cup toasted and chopped pecans (already ready)

Melt the butter and chocolate
Add the grated carrot
Remove from heat and add the eggs, pineapple, and vanilla
Add the flour, baking powder, baking soda, and mix well
Add the toasted pecans
Place in a 3x21 cm baking dish greased and bake at moderate heat for about 35 or 40 minutes
Cut into squares while the dough is still warm.
