Beat the butter and sugar well
Add the lemon zest, vanilla extract, cinnamon, eggs, and yolk, and mix thoroughly
Gradually add the all-purpose flour, walnuts, and cake flour
Reserve 1/3 of the dough
Spread the remaining dough in a baking dish of 40 cm x 27 cm
Brush with whipped cream
With the remaining dough, make a lattice top using the help of a pastry bag with a smooth tip
Bake in a moderate oven (180°C) preheated for 35 to 40 minutes
Remove from the oven, let cool, and cut into rectangles.
