Cocoa Cake

Milk mixture

Beta the egg whites in a mixer until stiff peaks form

One by one, add the yolks and continue to mix until well combined

Add the sugar and flour, and continue to mix for 5 minutes or until the batter has doubled in volume

Achieve medium heat on the oven

Mix the flour with yeast and sift over the milk mixture

Use a spatula to mix until smooth

Pour the batter into the forms and bake for 30 minutes, or until a toothpick comes out clean

Remove from oven, let cool and demold

Cocoa syrup

Heat the sugar and water in a small pan over high heat

Cook for 5 minutes and remove from heat

Add the orange liqueur and mix well

Let cool

Filling

Combine the sugar, heavy cream, and cornstarch in a saucepan

Cook over medium heat, stirring constantly, until the mixture thickens

Remove from heat

Covering

Beta the egg whites until soft peaks form

One by one, add the sugar and continue to mix until stiff peaks form. Reserve

Assembly

Place half of the cake in a large plate and drizzle with some of the cocoa syrup

Cover with a third of the filling

Top with the remaining cake, drizzle with some of the cocoa syrup, and repeat the process

Let cool completely

When cooled, top with the meringue and sprinkle with shredded coconut

Chill in the refrigerator for 3 hours.
