1 1/2 cups all-purpose flour
2 teaspoons active dry yeast
1/4 cup unsalted butter or margarine, softened
1/2 cup granulated sugar
1 egg
3/4 cup whole milk
1 cup grated coconut
1 cup pineapple chunks
1/4 cup shredded rapadura
1 teaspoon ground cinnamon
1 tablespoon melted unsalted butter

Combine the flour and yeast
Set aside
Beat the butter or margarine until creamy
Add the egg and beat well
Alternate adding the flour, yeast, and milk mixture, beating well after each addition
Add the grated coconut
Pour into a small greased baking dish
Arrange the pineapple chunks on top
Mix together the rapadura, cinnamon, and melted butter
Sprinkle over the pineapple
Bake in a moderate oven for about 35 minutes.
