1 basic pancake recipe
Filling
3 tablespoons of butter or margarine
3 tablespoons of olive oil
4 cups of chopped onions
1 kg of zucchinis (6 medium)
2 tablespoons of chopped fresh parsley
1 1/2 teaspoons of dried oregano
salt and pepper to taste
Sauce
2 tablespoons of butter or margarine
3 tablespoons of all-purpose flour
1/2 teaspoon of salt
1 1/2 cups of milk
2 eggs
1/4 cup of grated Parmesan cheese

1 1/2 cups of milk

Make the pancakes, using 1/4 cup of batter for each pancake
Melt 2 tablespoons of butter and 2 tablespoons of olive oil in a large skillet
Add the onion and cook until soft, stirring constantly
This takes about 15 minutes
Remove the onion with a slotted spoon
While that's cooking, grate the zucchini into 5 cups (medium-sized)
Cut slices for garnish
Melt the remaining butter and oil
Add the zucchini and cook over high heat until the zucchini is soft and the liquid has evaporated
Do not let it brown
Mix the zucchini with the cooked onion
Add the parsley, oregano, salt, and pepper
For the sauce: melt the butter in a pan, add the flour and salt
Gradually add the milk, stirring constantly until the sauce thickens and bubbles
Beat the eggs in a medium bowl
Add half of the warm sauce to the eggs
Pour into the pan again
Add the cheese and stir well
Set aside 1 cup of sauce
Place a pancake in a round refractory dish
Cover with 1/3 cup of zucchini mixture and 2 tablespoons of sauce
Continue placing pancakes, filling, and sauce, ending with a pancake
Arrange slices of zucchini and onion rings on top for garnish
Pour the reserved sauce over the top, allowing it to drizzle down the sides
Sprinkle with cheese
Bake in a moderate oven for about 30 minutes
Cut like a cake
Serve warm or at room temperature.
