Preheat the oven
Beat together the grated coconut and butter, then add the lime rind
Sift together the dry ingredients and alternate adding with the milk to the butter mixture, stirring until just combined
Add the beaten egg whites; stir in the shredded coconut
Pour into a greased 23 x 30 cm pan; sprinkle additional shredded coconut on top, if desired
Bake in a moderate oven for 45 minutes
Cut into squares.
