4 cups of beef broth

1 kg of lean beef

Mix all the ingredients together, except for the beef broth and gelatin
Place the meat mixture into a 25 x 12 x 7.5 cm greased loaf pan
Bake in a moderate temperature oven (170°F) for 1 hour and 15 minutes
When the meat is at room temperature, refrigerate until chilled
Remove from mold and reserve
Dissolve gelatin in beef broth and let it sit for 5 minutes
Heat and cook until completely dissolved
Let it cool and refrigerate until cold
Strain through a cheesecloth to remove excess fat, then refrigerate until firm like egg whites
Place the meat into an 8-inch square baking dish and pour gelatin mixture over top, gradually
Refrigerate for several hours or overnight
Slice the meat into 1 cm thick pieces and arrange in a decorative pattern on a platter, garnish as desired
Serve 12 portions.
