4 1/2 cups of all-purpose flour (675g)
4 1/2 teaspoons of active dry yeast (18g)

Beat the butter until creamy and light, then add the flour and beat well
Add the grated orange zest
Beat the egg yolks well and add them to the butter mixture
Add the orange juice and water
Sift together the flour and yeast
Alternate adding this mixture with the beaten egg whites, being careful not to overmix
Pour into a greased and floured 47x30 cm baking dish
Bake in a moderate oven (180°C) for 1 hour and 15 minutes
Let cool, then unmold and slice into two portions
Serve warm.
