A preheat the oven to moderate temperature (170°C)
Paste and dust with whole wheat flour a 30 x 21 cm baking dish
Beat the butter in a large bowl
Gradually add the honey and beat for another 2 minutes
Add the eggs, one at a time, beating well
Mix in the banana and coconut and stir until combined
In a separate bowl, mix together the whole wheat flour, baking soda, and pecans
Alternate adding the orange juice to the mixture and beat only until smooth
Pour into the prepared pan and bake for 40 minutes or until a toothpick inserted comes out clean
Remove from the oven and let cool for 15 minutes
Remove from the pan and let cool completely
If desired, top with whipped cream and decorate with banana slices and shredded coconut
Serve at room temperature.
